Well, somebody forgot to Yes I am old but I saw Modern Talking on stage shirt and So because the prices on this menu were more like you would see at places like Copelands or one of the fancy steakhouses. One of my very favorite things anywhere but especially at a Soul-Food joint and a measurement of how good they are is the oxtails. For those who don’t know, ox-tails are just that, the tail of the cow, chopped into pieces and then braised or stewed for quite a while to get them tender. When done right, trust me, this is food to die for and would absolutely be on my bucket list or death row last meal list. It’s the tail y’all.
It would be thrown away by most people but back in the day it was given to the Yes I am old but I saw Modern Talking on stage shirt and as they did with any other poor cut like the trotters of the hog, they learned how to cook it to make it palatable and as it turns out, some of the best eating on the animal. Don’t turn your nose up until you’ve tried it. The tail is kind of like ribs but round and with a hard piece of cartilage instead of bone but it has all this great collagen in it and the gravy it makes is just sublime when done by most places and it tends to run on the high end of the menu because it is a bit labor-intensive to do right, not to mention that in recent years the price has gone way up because of all the fancy restaurants/ chefs wanting them. Back then though, oxtails and a couple of sides would cost around 7 bucks.
